Soo Uhm RD, LDN
Bio
Originally from central Maryland, Soo earned a Bachelors in History from the University of Maryland College Park with plans to become a high school teacher. After teaching in India, plans changed and she took time off for a year with AmeriCorps, baking party and wedding favors and working at a train museum. A winding four years later, she completed her Bachelors in Nutrition at her alma mater while teaching group fitness classes. She completed her dietetic internship at Keene State College in New Hampshire. Before coming to NC State in 2017 for warmer weather, she was providing outpatient nutrition services across the lifespan in Vermont and New Hampshire and trying to hike as many mountains as possible and eat as many maple cremees as she could find.
Soo works from a body neutrality, Health At Every Size philosophy and has interests in type 2 diabetes education, cholesterol and hypertension management, plant based diets, and disordered eating. With her love of teaching, Soo also enjoys providing outreach education. When not in the office, you’ll find her baking (current project: croissants) and planning her next food adventure in the triangle area.
